Eileen is a certified Permaculture Designer (Ashevillage, Asheville, NC), Master Gardener of Middle TN, and Holistic Herbalist (Blue Ridge School of Herbal Medicine, Asheville, NC). She is currently Assistant Manager at Remedy Herbs in Athens, GA and is enrolled in a MS for Functional Medicine and Human Nutrition at the University of Western States. She inherited her love of plants and animals from her parents who have a small working farm in Franklin, TN. She studied Ecology & Religion at Sewanee: University of the South where she discovered John Muir, Edward Abbey, and Wendell Berry. After graduation, she co-piloted a intentional-living internship at St. Mary’s Convent in Sewanee, TN called The Organic Prayer Project. It is still thriving today and connecting students to land and self through the Benedictine mantra of work and prayer (ora et labora).
Her greatest joy is sharing her love of plants, bugs, fungi, and all sorts of critters with others. She hopes to use her nutrition education to connect kids (and kids at heart) with nature and plants on a deeper level while preventing illness and disease. She is an avid artist and works freelance. She recently illustrated a plant-based children’s book series (My Dino Ate My Broccoli, My Dino Sat on My Shiitake, and My Dino Farted in My Greenhouse). She loves to cook and feed people. Her dream is to be a nature-based nutrition educator and be surrounded by flowers and butterflies all the time.
